Date and Orange Dressing

Serves 3 to 4

  • ¾ cup orange juice or blood orange juice
  • 1 tbsp. lemon juice or key lime juice
  • 1 tbsp. tahini paste
  • 2 to 4 dates, pitted
  • ½ tsp. garlic, pureed
  • 1 tsp. chipotle in adobo sauce
  • 1 tbsp. fresh cilantro, chopped
  • salt to taste

Soak the dates in the orange juice for an hour.

Place the orange juice, dates, lemon juice, garlic and chipotle into a blender and puree to a fine consistency. Add the tahini and blend for a few seconds more.

Season with salt, add the chopped cilantro and serve on your favourite salad. This dressing works well on all types of salad such as quinoa, kale, pea shoots, sprouts, mixed greens, citrus fruits, green lentils, pasta and wild rice. Top up your salad with proteins like salmon, chicken, tuna or ham.
