Spicy Watermelon Hummus
Hummus makes a healthy and delicious snack - a few chunks of watermelon adds sweetness and a nutrient boost. Adapted from watermelon.org.
- a few big chunks of watermelon
- 1 19 oz (540 mL) can chickpeas, rinsed and drained
- 1 large garlic clove
- 2-4 Tbsp chopped red onion
- 1/4 cup chopped fresh cilantro or parsley
- juice of half a lemon
- 1-2 Tbsp extra-virgin olive oil
- 1/4 tsp each cumin, coriander, ginger, paprika and turmeric (or 1 tsp curry paste)
- finely diced watermelon, for garnish
Makes about 2 cups.
Watermelon Pomegranate Sangria
A pitcher of fruity sangria is the perfect patio sipper.
- 4 cups (1 L) watermelon chunks, frozen
- 1 medium orange, thinly sliced (discard ends)
- 1 bottle red wine, chilled (a shiraz or merlot works well)
- 2 cups pomegranate juice
- ½ cup brandy
- 1 1/2 cups sparkling orange drink (Orangina or orange Italian soda)
Put the frozen watermelon cubes and orange slices into a big pitcher and pour over the wine, pomegranate juice and brandy. Add the orange drink just before serving.
Serves 10.
