Serves 12 to 15

  • 3 kg Sunterra Farms spiral ham
  • ¾ cup pure honey
  • 2 to 3 tbsp grainy Dijon mustard
  • 1 tsp fresh garlic, chopped
  • 2 tsp lemon juice
  • 1 tbsp fresh parsley, chopped

Warm the honey slightly in a sauce pan and add in the mustard, garlic and lemon juice. Stir and bring it to a gentle simmer.

Brush the ham with the glaze liberally so the flavours soak into the meat. Place the ham in a 2 ½ inch deep roasting pan. Cover with aluminum foil to retain moisture.

Roast the ham in a preheated oven at 325F (163C), about 10 - 12 minutes per pound. Baste the ham with the glaze a couple of times during roasting. The ham is ready when it has reached an internal temperature of 140F. To get a crisp outer layer, you can remove the foil in the last 15 minutes of cooking and increase the temperature to 400F.

Sprinkle the chopped parsley on top and brush again with the pan drippings.

Allow the ham to rest for 10 minutes before serving.
