Spanish Chic Pea Stew

 

2 cans 398ml organic chic peas

1 can diced or stewed tomatoes

2 red peppers diced

1 onion diced

1 tbsp chopped garlic

 

1 tbsp Spanish paprika

Chipotle pepper to taste

Salt and pepper to taste

 

Place tomatoes in a bowl and crush, next drain chic peas and rinse thoroughly

Sauté peppers and onions lightly then add garlic.

Next add chic peas and tomatoes and bring to a simmer.

Season with paprika and chipotle and add salt and pepper as desired.

Simmer for a few minutes and serve with basmati rice or cornmeal gnocchi
